Opened in 2021, this new addition to the Saint-Siméon Collection embodies the same philosophy: to offer unique destinations that respect the spirit of the place while remaining firmly rooted in the present. Located in the heart of Honfleur’s historic district, the Saint-Delis is spread across three buildings from the 17th, 18th, and 19th centuries that served as the home and studio of painter Henri de Saint-Delis until his death in 1949. Perfectly restored, they house nine rooms and suites decorated with fine materials and oak paneling, linen fabrics, and marble in the bathrooms—each equipped with a shower-hammam. A member of Relais & Châteaux, the hotel does not have its own restaurant but can reserve a table at Ferme Saint-Siméon (Les Impressionnistes restaurant, chef Matthieu Pouleur) or at Auberge de la Source, both of which are also members of the collection.
