Gault&Millau's review 2025

By transforming a 16th-century townhouse—once the home of Simone de Beauvoir and the Spanish artist Joaquín Sorolla—into a 5-star boutique hotel in the Meliá Collection, father-and-daughter architects Álvaro and Adriana Sans took on a delicate challenge: harmonizing a historic landmark with refined design in the heart of the Left Bank. From the moment you step into the lush patio with its wrought-iron railings, the atmosphere is set by a signature fragrance with floral notes. The 39 rooms, each inspired by a painting by Joaquín Sorolla, play with color and light amid velvet, black marble, and wood paneling. On the ground floor, Café Clotilde—named in honor of the painter’s beloved wife, Clotilde Garcia del Castillo—offers sweet creations by pastry chef Nina Métayer (World’s Best Pastry Chef 2023) in a cozy, museum-like atmosphere. A place where art and life blend subtly: a peaceful terrace, warm hospitality, and rare views of Notre-Dame from the highest suites, less than 500 meters away.
