Gault&Millau's review 2025

Masterfully redesigned by architect Jean-Philippe Nuel, the Experimental Marais (formerly the Evok group's Sinner, already designed by Nuel) occupies a former 1930s telephone exchange in the heart of the Haut Marais district. With its urban liner look, the building impresses right from the lobby: generous volumes, light-colored wood, XXL bay windows... light circulates freely, setting the tone for an assertive contemporary elegance. In terms of spirit, the hotel surfs on New York influences and bohemian spirit. The vibrant, hushed American Bar is reminiscent of Manhattan's finest addresses, while the Temple & Chapon restaurant - headed by chef Mélanie Serre - explores inventive cosmopolitan cuisine inspired by her travels. The 43 rooms and suites, designed by Tristan Auer, evoke a refined, nomadic art of living, with monastic nods, noble materials and sculptural lines. Some of the duplex rooms offer superb views over the rooftops of Paris. On the second floor, the spa completes the experience with a hammam, Roman bath, indoor pool and double treatment room. A holistic sanctuary, confidential and furiously stylish.
