Since 2001, the Perse family - who also own Château Pavie, 1er grand cru classé A, and Château Monbousquet - have brought the emblematic Hostellerie de Plaisance back to life as Hôtel de Pavie. Perched on the heights of Saint-Émilion, this 5-star Relais & Châteaux hotel offers one of the finest panoramas of the medieval city, the Tour du Roy and the surrounding ocean of vines. The interior design by Alberto Pinto, punctuated by Bernard Buffet paintings belonging to the Perse family, lends the hotel a timeless elegance. The 22 rooms and suites are divided between the Maison du Clocher, the historic heart of the hotel, the Maison du Village, linked by a glass elevator, and a third 16th-century residence inaugurated in 2022. Entirely redesigned by Giorgio Azzi and Jean-Philippe Nuel, the rooms feature both classic and contemporary refinement, with impressive volumes of up to 136 m². The address also conceals a unique curiosity: a back door opening onto an underground gallery leading to the monolithic church. Haute gastronomy takes pride of place at La Table de Pavie, where Yannick Alléno revisits local Bordeaux products - lamprey, oysters and crepinette, grattons - while sublimating the vineyards and the region. The cellar, with its hundreds of references, extends the experience, as does a visit to the spectacular winery designed by Alberto Pinto in 2013, where art and wine meet, right down to the impressive barrel cellar.
