Gault&Millau's review 2026

In 2025, in the heart of the Old Port, L'Amista took up residence in the former Hôtel Saint-Louis, a Haussmann-style building whose facade, adorned with lion heads, gargoyles and wrought-iron balconies, is sure to catch the eye. Inside, Dorothée Delaye has imagined an urban design for the 24 rooms, where local waxed concrete rubs shoulders with Salernes ceramics and ochre touches borrowed from the calcareous calanques. At the very top, the 80 m² rooftop boasts a panoramic bar with a 360-degree view of Notre-Dame-de-la-Garde, gilded in fine gold, and Fort Saint-Jean. In the Louison restaurant, the chef creates a Mediterranean fusion menu served from morning to night with produce from the Noailles market three hundred meters away.
