Trained by Alain Chartier in Vannes, Meilleur Ouvrier de France and world champion in frozen desserts, by Patrick Gelencser, the master chocolatier in Les Sables d'Olonne, and by Thierry Bamas in the Basque country, also Meilleur Ouvrier de France, European pastry champion and world champion in frozen desserts, Vincent Vallée could only follow in the footsteps of his glorious elders. Now a world champion in chocolate, Vincent has two boutiques in Les Sables d'Olonne, where customers come for his "Signature" and "Iconique" boxes, his large marshmallow and chocolate bears, his macaroons and his "récréations", gourmet bars with hazelnut, peanut, pistachio or coconut.
