Butchery It's time to set the record straight and know what we're eating. Benjamin Darnaud, butcher-cook-entertainer, takes advantage of his many hats to promote responsible, quality-conscious producers. There's no wastage: the cuts are delivered once the whole animal has been sold (no filleting, they receive a whole animal and sell all the cuts). It's up to the butcher to play his part in enhancing the value of each piece, the key being to know how to prepare it. The key is knowing how to prepare the meat. And also, salt-meadow lamb from Mont Saint-Michel, black pigs from Bigorre, poultry from the South-West... And for pork, even better, Kintoa de Pampi in the Basque country is EXTRAordinary.
