Stone & Charden might have sung "La Verdura... La Verdura...", but these are no longer the days of disco. Today, it's vegetarian and 100% organic. Stéphanie Minet, who comes from a supermarket background, has taken up the challenge with zeal, choosing her produce from local farms. The hunt for waste is on. Gluten-free products, local produce (rillettes de la mer from L'Atelier du Poissonnier, velouté d'asperges from Ferme Langevine, biscuiterie from Quinéville...), fruit and vegetables, and the whole range of a good delicatessen, cellar included. Tables are set in vegetarian mode for those who prefer to listen to the music.
