To understand the inimitable taste of Banka trout, you need to see this superb aquaculture farm in the heart of nature, the fresh water from the Arpéa spring flowing down from the mountain to irrigate the ponds, and the care given to the fish by passionate people. Some of the trout are impressive in size, but their flesh is of rare finesse, and can be eaten au naturel, smoked, in rillettes, basquaise, etc. And so as not to waste anything, the skin of the largest specimens is transformed into leather goods, which are sold on site.
