Pastry Located a stone's throw from the central market, Théo Chereau's patisserie is clear and precise, without overload. Inspired by the ocean, he creates desserts with little sugar, clean textures and assertive flavors. Vanilla millefeuille, chocolate-hazelnut entremets, lemon-tarragon tarts... each creation is based on a simple, well-executed idea. The atmosphere in her tea room is calm and sober, in keeping with her world. The Galet Rochelais is one of her must-tries, combining softness, crispness and a melting center in a well-balanced combination. The quality/price ratio reflects the care and attention to detail at every stage.
