Roaster Founded in the heart of Burgundy in the early 1920s, the Senoble cheese dairy has been handed down from generation to generation. In 1990, Marc Senoble decided to take the company in a crucial direction, refocusing on the dessert market. Almost 100 years after the birth of the house, the first boutique opened in February, a stone's throw from the gardens of the Palais Royal. Macarons, fruit tarts, operas, petits choux, éclairs and ice creams are no match for the creations of the best pastry chefs, but it's the house specialty, the astonishing ile flottante (a meringue dome enclosing a creamy vanilla and runny caramel) that's a must-try. Upstairs in the patisserie/tea room, the restaurant operates on the principle of a weekly menu and a very short savoury menu, with, of course, the possibility of tasting the in-house pastries at the table.
