For over twenty-five years, Christine Blot has been overseeing the authentic production of poire tapée, in traditional conditions: a huge wood-fired oven where the peeled pears are passed twice, in one direction then the other, before being "tapped" to release the remaining moisture by flattening them. The last pass through the oven is before they can be used, as a fruit confit, in compote, confectionery, in wine... The store is open all year round, and the owner is an excellent teacher, always ready to tell the good story.
