Delicatessen Pierre Oteiza is one of the Basque pig breeders who have helped save the breed from total extinction. An artisan cured meats producer, and a devotee of his marbled, particularly tasty meat, he adheres to a strict charter: natural feed, free-range rearing, 18-month air-ageing of hams... At the end of this chain of tasks are the products. Sausages, chorizos, hams from the Aldudes valley or Kintoa, rillettes, pâtés with porcini mushrooms or Espelette pepper, as well as confits and cassoulets, are the hallmarks of Oteiza products. You'll also want to try the tasty garbure simmered with fattened duck necks, and the remarkably prepared foie gras.
