Gelateria An anthology of raw milk ice creams, just like the subtle sheep's milk ice cream. The sorbets are powerful, with no less than 60-90% fruit: you'd swear you were biting into a pink grapefruit, a kiwi or a peach from a small producer in the Gers. A superb savoury range: foie gras, mustard or Roquefort ice cream, caviar or piquillo sorbets, all with millimetric precision in taste balance.
