Chocolate factory After several years working for others (notably Belin in Albi, where last year he won the 3rd Goût et Santé des artisans MAAF prize for his finger tartlet with raspberry and thyme, a creation he christened "L'Equilibre"), Ludovic Carrel has been in charge of the lab at the famous Pelen patisserie-chocolaterie in Lons-le-Saunier for the past few months. Beautiful classic pastries, macaroons to die for, and chocolates of consistently high quality are the hallmarks of this beautiful, century-old store.
