Vincent Dallet puts all his care and inventiveness into his delicious sweets, which you can learn to make with your own hands and simple utensils. It's a moment of pleasure and generosity that he shares with us in his school. The classic entremets revisited reflect this same generosity, and the creations follow the seasons.
