Pastry Marshmallows, fruit jellies, galettes in the season of Three Kings and formidable cannelés - this is Bordeaux, for God's sake! Cyril San Nicolas doesn't skimp on the traditional, and succeeds with a delicious little flan baked in a copper mold. A little deviation, which becomes a signature pastry with a version of the famous canelé filled to the brim with lime chocolate cream, salted butter caramel and mascarpone chantilly. Yummy!
