The Kieny family have been chefs from father to son since 1850... Laurent, the only member of the family to have chosen the profession of pastry chef, is now responsible for "Diamant Noir", a cocoa meringue with dark chocolate chantilly, and "Texture", a play on nine chocolate structures.
