Our favorite is the créquillon (praline puff pastry, original Caribbean chocolate sabayon, roasted and caramelized hazelnut mousseline), but also the "Frivolités Lensoises" (chestnut and juniper truffles) and "Cœurs de Braise" (sugar-free chocolate bites flavored with yarrow).
