Pastry Today, Pierre Clarissou revisits great classics such as the inverted lemon tart, made on a pavlova-style meringue base, topped with lemon cream and sprinkled with crumble; but also eclairs, raspberry tarts.... These creations reflect the power of taste that Pierre Clarissou, who trained with such greats as Ducasse, Pralus and Passédat, strives for. 2008 was the year of his return to the fold and a successful installation where aesthetics are combined with flavors that blossom in 2015.
