Cheese dairy It's the story of a team of professionals, brought together by Pierre Brisson. His father was a winegrower, and as a child he was introduced to the finer things in life, particularly wine and cheese pairings. He came up with the idea of introductory workshops in caseology (knowledge of terroirs, cheese making, tasting techniques, good pairings). Paroles de Fromagers, l'école du fromage is also a boutique and maturing cellar in Paris, cheese-making workshops, a catering service and private use of the 17th century vaulted cellar for all your events. All that's left to do is taste, because cheese should always have the last word...
