François Brault, after having crunched the numbers in a previous life, started kneading dough. With clear ideas in mind, he trained with the best professionals and chose irreproachable basic products. Only organic flour and natural sourdough. Breads and viennoiseries are homemade, and it's a merry-go-round of good products at good prices. Gluten-free products are also available, including pure buckwheat and Swedish.
