Gault&Millau's review

Pastry After Biarritz, Noisette Pâtisserie has set up shop in Bayonne, at the foot of Les Halles. Since November 2024, this address has been delighting sweet-lovers with the creations of Mathieu Turonnet. As soon as you enter, a counter stocked with pastries and snacks catches your eye. The menu evolves with the seasons, but retains its classics, including the iconic "entremets noisette", with its perfect balance of crunch and melt-in-the-mouth texture. An address not to be missed in the Basque Country.
