Here, the emphasis is on naturalness and authenticity. We take great care in choosing pigs raised in the open air or on straw. The nitrate-free fromage de tête is all gray, but all good. The soft parsley ham is a model of its kind, as is the pig terrine with marc de Bourgogne, tonic and highly aromatic, and the raw-smoked rillettes comtoises are powerful.
