Refiner Altitude and ripening go hand in hand. At an altitude of 1000 m, carefully selected farmhouse cheeses from the surrounding area are taken in hand and to heart by the team of Joseph Paccard, artisan cheese ripener. Artisanal methods do not detract from efficient marketing.
