Born and bred in Rém, the Audinot family first exercised their talents in the tripe trade. In the wake of the mad cow crisis, the establishment diversified and developed a charcuterie business with products made on the premises. Specialties of great flavor, such as homemade andouillette made by mixing pork stomach with beef rennet, all flavored with simple onions and no spices, or an exemplary pâté en croûte.
