And you could almost say he was born into it, since his family has been in the oyster business for six generations. In the oyster beds of this kind-hearted craftsman, you'll find fine oysters with little flesh and plenty of iodine, special oysters with a characteristic crunch and a powerful ocean flavor, and the amazing "Perles", the fullest oysters, delivering incredibly rich and delicate flavors.
