Huîtres Brin, in La Couarde-sur-Mer, perpetuates oyster-farming know-how handed down through four generations. On the Terrasse de la Moulinatte, facing the sea, oysters can be enjoyed raw or worked, chopped, cooked or au gratin, with a few seafood products thrown in for good measure.
