Breeding A former tobacconist, Dominique Huss converted to heliciculture in 2001. A few hectares of land above Orbey did the trick, along with some advice gleaned from a few colleagues, and now he's the one who trains the (rare) young people who want to take up the trade. The region's top chefs buy from him (notably Olivier Nasti and Julien Binz). Sales on site only, but also at local markets.
