Gault&Millau's review

Refiner Building on the success of his store in the 15th arrondissement, Laurent Dubois, MOF 2000, has taken over this small address to ensure even better ripening results, whether the cheeses are processed on site or not. Faithful to the terroir, he imposes his instructions. A rocamadour must be creamy, a selles-sur-cher half creamy, and so on. Suppliers are given pride of place, and this transparency appeals to both local customers and visiting but loyal foreigners.
