Rotisserie Behind her 9-meter stall, Corinne Rouffignat is well known on the Saintes markets where, from Tuesday to Sunday, she sets up shop from 7am to 1pm. It's here that, since 2016, she's been roasting free-range Label Rouge farmhouse yellow chickens. She also cooks by feel and according to her moods: "I make recipes that I like. Many of them come from my family. The products I use are fresh and, as far as possible, local. That's my strength." All year round, she offers paëlla, tajine, potatoes from the Sarlat region, stuffed tomatoes and snails raised in Charente-Maritime. In winter, it's beef bourguignon, blanquette de veau, tartiflette, sauerkraut, lasagne, filet mignon, cannelloni, rabbit... Corinne also caters family events, to order: "I bring my own equipment and cook on the spot An old-fashioned gastronomy that delights connoisseurs! Visit her on Saturdays and Wednesdays at the Saint-Pierre market (downtown Saintes), on Tuesdays and Fridays at the Cours Reverseaux market, and on Sundays and Thursdays at the Saint-Palais market.
