Bakery
A kouign-amann—a nod to their native Brittany—sourdough breads (traditional baguettes, rye loaves, einkorn wheat bread, sesame bread), pure-butter pastries (flaky brioche, palmiers, cookies…), snacks, fougasses for special occasions (or made to order), and delicious pastry creations (such as éclairs, flan, and tarte vigneronne)... Pauline Gault and Gwendal Percherel know how to bring out the best in local ingredients from the Indre-et-Loire region to perfection, following the rules of French culinary art. Based between Sainte-Maure-de-Touraine and Saché since 2024, in the heart of the iconic Loire Valley region, they craft seasonal flavors on-site using ingredients from the Doilés: farm-fresh eggs and seasonal berries from the farm in Thilouze, from La Cloche d’Or in Pont de Ruan for goat cheese, from the local greengrocer for fruits and vegetables, from the Verneuil-sur-Indre dairy for butter and milk, and from the village mill or the one in Chérizy for flour… Here, every treat is homemade using the finest ingredients and in harmony with the seasons.
