Langouille, an ancestral, artisanal specialty from Labbe Simon, now in the hands of charcutier Jean-Philippe Rabu. It's made from cured and smoked pork tongue, cooked in stock in beef casing. It is available in 7 varieties, depending on the desired flavor, or au naturel. The workshop and store are located on a small business park at the entrance to Saint-Malo-de-Guersac from Saint-Nazaire. And don't forget to try the excellent smoked filet mignon, ideal as an aperitif.
