Pastry Jean-François Brigant is one of the few waffle-makers to maintain the artisanal tradition. We can't get enough of his small-checkered cake, which he makes in a variety of ways, including the latest La Mojito (which combines rum and lime). His recipe is old-fashioned, with no coloring or preservatives, and necessarily personal in a region where recipes are as numerous as the cooks themselves...
