In this respect, the supply is of the highest quality, notably in the well-matured goats' cheeses, which cover the region and beyond: sainte-maure, selles sur cher, valençay but also rigotte de Condrieu, parthenay, picodon, rocamadour... The maturing is of the highest quality, as for the mountain cheeses, the blue cheeses, the tommes, like this soft and tasty tomme d'Anjou.
