Patrick Sourbès (father a Gers farmer, mother a Lyon cheesemaker) has been involved with the product from an early age. He naturally turned to cheese production (award-winning for his picodon), and his experience acquired with famous affineurs led this master cheesemaker to a stone's throw from Lyon. Raw and local milks, traditional saint-marcellins, comtés, camemberts, goats' cheeses...
