Vincent Pélisson maintains a fine selection of natural farmhouse products. He relies on three key charcuterie suppliers: Normandy for ham on the bone, garlic sausage and boudin; Lyon for cervelas, pâté en croûte and rosette; and Corrézien for jambonneau and raw preparations from Label Rouge pigs.
