Gilles Coolen is a caféier, cacaofévier (there are 12 in France) and caffeologist. This tiny boutique has a maximum of 2 tables for tasting, but you can trust this barista, a graduate of the Colombian coffee school. Here, you can crunch cocoa beans like candy, sip a glass of hot juice spiced to suit the mood of the day, or follow his advice on food pairings (roast veal, cod, it's all about the dose...). Excellent selection of organic teas. The boutique is guaranteed to be out of fashion, authentic and sincere, with a purist's selection.
