Delicatessen Jean Dijols, master pork butcher, received his second Champion de France trophy for best superior white ham in 2018. His wife and loyal partner, Christelle, markets the creations. Originally from Laguiole, this charcutier's grandson has known the basics of the trade since his earliest childhood. He works with fine cuts and designs his own sausage flower. His fromage de tête, andouille and rillettes have earned him nothing but compliments. Some of his products are becoming rare, such as smoked products and cured meats.
