Producer To give their oysters their inimitable flavor, Henry Schaller and his six employees engage in a veritable ballet with the elements. Oyster farmers play the role of "shepherds of the sea": first, they harvest the spat (oyster larvae) in their natural environment, then transhumance them to the various oyster beds in the Marennes-Oléron basin, in contact with a unique terroir. The oysters are then brought back for a crucial stage: maturing in claires. "At this stage, our oysters filter their salt water, giving them a finer, less iodized taste and a slightly vegetal flavor," explains Henry Schaller. The Sélection Fine and Spéciale Schaller, a top-of-the-range, very fleshy oyster, as well as several IGP Marennes-Oléron-labeled varieties such as the Label Rouge-certified Fine de Claire verte, are distributed in France and Europe. Also available at the Marennes boutique. "It's a demanding job, but the quality we get from a living product, totally linked to nature, is our greatest reward." Open Monday to Friday, 8am to 4pm. Closed Saturday and Sunday.
