After 15 years on boulevard Raspail, pastry chef Hugues Pouget, 2003 French Dessert Champion, moved to rue du Cherche-Midi in November 2025. He took the opportunity to rethink everything. The first decision was to rethink the name. Hugo & Victor simply became Hugues Pouget. The second decision was to showcase all his expertise, and not just in patisserie and chocolate. He decided to make his address a place for gourmet treats, where anyone can come and buy bread, savoury tarts, pastries, jams or sandwiches. When it comes to pastries, Hugues Pouget has scaled down the menu to offer only the great classics (Religieuses, millefeuille, lemon meringue tarts...), always guaranteed to be free from colorants and artificial additives.
