Breeding Benoit and Michèle Bigeon moved to this charming farm at the foot of the Cantal mountains, surrounded by lush greenery, to raise rabbits in the best possible conditions. Fed on cereals and alfalfa by Mr. Bigeon, the little rodents then pass into the expert hands of Mrs. Bigeon on the stove side. The result is a number of delicious, natural preparations: terrines, sausages, rabbit in cognac, roast stuffed with herbs and prunes, and a surprising rabbit boudin blanc.
