Benoît and Michèle Bigeon moved to this charming farm at the foot of the Cantal mountains to raise rabbits in the best possible conditions. Fed on cereals and alfalfa by Mr. Bigeon, the little rodents then pass into the expert hands of Mrs. Bigeon on the stove side. The result is a number of delicious and natural preparations, including terrines, sausages, rabbit in cognac, roast stuffed with herbs and prunes, and a surprising white pudding. These products can be found at the Aurillac market on Saturday mornings, in delicatessens and by mail order.
