A supplier to some of the island's finest restaurants, ice cream chef Pierre Geronimi cultivates the Corsican soul and identity in many of his ice creams, such as fleur de lait with candied Corsican citrus fruits, local honey or chestnut flour... his culture of flavors with anchovies, pistachio, watercress... alongside the classics of the genre. His passion comes from a father who was a pastry chef, and he now produces over thirty flavors from his laboratory, an icy universe that lacks neither boldness nor beauty.
