Jacques Geismar has been immersed in the world of gourmet smells since he was a child, and taking over was an obvious choice. The recipes are traditional, the specialties are local and the advice is personalized: his favorite dish, pickelfleisch (an Ashkenazi pastrami), will not dethrone the smoked products of Alsace, sauerkraut, braised ham...
