Cheese dairy
The cheese dairy is a family-run business. As it is not located in an appellation zone, this farm has no one to answer to, and can run its business with all the rigor that is its hallmark. The cheeses from this farm, which controls the entire production process from breeding onwards, are prepared by hand, matured on spruce boards in a vaulted cellar ideal for this operation. Tomme, Bouquetou or Roudoux... are made with raw milk from the estate's own goats. A gold medal at the 2017 Concours Général Agricole for Pavé du Vernet.
