Cheese dairy A Toulouse institution where François, last year's MOF fromager, selects and matures the region's cheeses in former natural Toulouse brick cellars, such as anneau de Vic-Bilh, an extremely melting goat's cheese with well-balanced goaty aromas, and tommette des Corbières, a delicate, round ewe's cheese rubbed with grenache. Excellent 24-month Comté from Marcel Petite, both sweet and lactic, or 48-month, with a more brittle texture and more pronounced notes of roasted dried fruit.
