Cheese dairy
Antoine Bernard has made the most of a region that's ideal for raising dairy cows, a veritable "dairy basin without cheeses". After a cycling tour of France to learn the cheese-making trade, he returned home with a wealth of ideas and inspiration, enabling him to start making the soft cheese products he loves so much. He was joined by his brother in 2001, and the family business now makes a fine range of products, including the soft Wissant sablé, hand-brushed with white beer and coated with fine breadcrumbs to give the bite a delicate crunch.
