Cheese dairy
After taking over, and occupying, the Vigier family premises for three years, Rémy and Romain Mercy decided to open their new boutique in the historic Halles area. They select local cheeses and ingredients, then refine and transform them to develop authentic recipes. They work seasonally with local farmers, winemakers and artisans. Their specialties include young cantal with local truffles (Tuber Melanosporum, without truffle oil), brie with mint and pepper, brillat-savarin with basil, Leroy-Berger crottin with a heart of tapenade or wild garlic pesto... They also offer a wide range of organic and local wines, and a fine selection of delicatessen products.
