Butchery François-Xavier Craquelin is one of those craftsmen who have the good sense to go and see what's being done elsewhere, and come back with a wealth of surprising ideas. The world's most famous meat, Kobe beef, inspired him to create a very Norman specialty: beef with cider! Drinking 15 liters of cider a day, the cattle produce tender, full-flavored, marbled dark meat, which will express its full potential after some twenty days of maturing.
