Gelateria Demanding on texture, Nicolas Babin never crushes his ice creams with a spatula, as many ice cream makers do, as they come out of the turbine (to save storage space), but lets them fall into the tubs so that they remain airy and very supple in the mouth, like the gazelle horn ice cream made with almond milk, the bewitching oriental ice cream with dates and pistachios, or the croustille ice cream with Piedmont hazelnuts. Sorbets are just as good.
